座位席次和料理的擺設-

一、中國料理大致上都使用圓桌。

二、圓桌離入口最遠處是屬於上座,接著就是主客的左邊,再來是右邊,依序而下。

  接近入口的座位是下座。

三、通常餐具也有固定的位子:

正面的最前面是餐巾,右前方的是取菜的盤子,左側是湯匙與佈菜的深盤,右側是調羹和筷子,

享用佳餚的注意事項-

一、不能用手拿著盤子。

二、儘量一道料理配一個專用的取用盤,以免使味道混淆。

四、用麵食時,用筷子挾麵條,放在調羹中再享用,看起來比較優雅。

五、不可將裝有麵食的碗端起來直接喝,更不能發出聲音。

六、喝茶時,若沒有服務生,作東的主人要為所有客人倒茶,等茶葉沉下後,把杯蓋稍微挪開再飲用。

其他禮節(1)餐中保持肅靜。勿吃出聲音、牛飲,使用刀叉、牙籤時也不發出聲音。(2)不應只顧吃,應與人談有興趣的話題且控制音量。(3)服裝須得體合宜。(4)口中有食物時不宜開口說話,他人口中有食物時,也避免向人發問。(5)中途離席須說對不起。(6)進餐速度應配合女主人或女主賓,不宜太快或太慢。(7)食物嗆口時,可大口喝水,若無助益,則以餐巾掩口,咳嗽一下,把東西咳出。嚴重者離席至化妝室解決。
