蚵仔煎

材料:

1.鮮蚵 150克 (事先以鹽清洗過),茼篙菜 70克(清洗後切斷),土雞蛋 2個。

2.純番薯粉 2.5兩,水 4大匙,韭菜適量。

3.番茄醬 6大匙,醬油膏 2大匙,味噌 2大匙,糖 4大匙,水半碗,太白粉 1大匙。

作法:

1.將材料 2 的番薯粉、水、韭菜事先調勻,並將材料 3 調成醬汁備用。

2.平底鍋放適量油,加鮮蚵,先將其煎至七分熟。

3.再加入半碗材料 2 一起煎至凝固、呈透明狀。

4.最後加入雞蛋、青菜,將正反兩面煎熟,吃時淋上材料 3 調成的醬汁即可。
