    漁香茄子

    材料:

    茄子 6兩

    瘦肉 2兩

    薑 2片

    蔥 1棵

    蔥頭 2粒

    紅辣椒 1隻

    豆瓣醬 1湯匙

    調味;

    糖 1/2茶匙

    粟粉 1茶匙

    薑汁 1茶匙

    水 1茶匙

    油 1茶匙

    生抽 1/2茶匙

    胡椒粉 少許

    麻油 數滴

    獻汁:

    糖 1/2茶匙

    酒 1茶匙

    浙醋 1茶匙

    老抽 1茶匙

    麻油 1/2茶匙

    上湯 半碗

    製法

    1. 瘦肉洗淨,抹乾,切絲,加入調味料,醃約15分鐘。

    2. 薑及蔥頭R4碎,蔥切粒,紅辣椒半隻切碎,半隻切絲。

    3. 茄子洗淨,切成約5厘米長粗條。

    4. 燒油3湯匙,放入茄子,炒3分鐘,盛起備用。

    5. 燒油2湯匙,爆香薑、蔥、紅辣椒、乾蔥茸及豆瓣醬,加入瘦肉,炒2分鐘,再加入茄子及獻汁。

    6. 獻汁用慢火煮至濃,盛起,以紅辣椒絲作點綴。

    Ingredients :

    Eggplant 225gram

    Pork meat 75gram

    Ginger 2 slices

    Green Onion 1 pc

    Shallot 2 pcs

    Red pepper 1 pc

    Bean sauce 1 Tbsp

    SEASONING :

    Sugar 1/2 tsp

    Powder 1 tsp

    Ginger sauce 1 tsp

    Water 1 tsp

    Oil 1 tsp

    Light soy sauce 1/2 tsp

    Pepper powder

    Sesame oil few drops

    GRAVY :

    Sugar 1/2 tsp

    Wine 1 tsp

    Red vinegar 1 tsp

    Dark soy sauce 1 tsp

    Sesame oil 1/2 tsp

    High soup 1/2 bowl

    Procedure :

    1.Wash pork meat, dry, cut into shreds, add in SEASONING, marinate for 15 minutes.

    2.Mince ginger and shallots, cut green onion,

    Red pepper : mince half piece, cut the other half into shreds.

    3.Wash eggplant, cut into 5cm wide shreds.

    4.Heat 3 Tbsp oil, add in eggplant, fry for 3 minutes, take out and put aside.

    5.Heat 2 Tbsp oil, fry ginger, green onion, mince red pepper, shallot and bean sauce, add in pork meat, fry for 2 minutes, add in eggplant and GRAVY.

    6.Cook until sauce thickens, transfer to dish, add in red pepper shreds for garnish.
