Do I need to spend the whole day if I go from Sydney to Goldcoast or Goldcoast to Carins by plane? (including the way to airport and taking back the luggages) By the way, if I want to buy domestic flight tickets, will I buy it in HK or buy it in Australia? Which one will be cheaper? Do I need to book it now? (I want to go in early April) Thanks!!

No... only few hours...
Sydney to Gold Coast -- 90 mins
Gold Coast to Cairns -- no flights... you need to go to Brisbane by coach, then take plane there... Brisbane to Cairns -- 2 hrs 30 mins
You need to be in airport at least 2 hours before departure. But since the airports of Gold Coast and Cairns is very small. You can take back your luggage within 20 minutes after you leave the plane. So you can count the whole jounery from Sydney to Gold Coast is around 5 hours, and from Gold Coast to Cairns via Brisbane is around 5 hours 30 mins (including travelling to airport)
For the ticket of domestic flight, you can buy it when you buy the ticket HK to Australia. Qantas usually has a promotion on the domestic fare, like each domestic session on the Eastern coast will be only HK$350. You better ask for the information from Qantas by phone.
You can also check with virginblue and jetstar as well. But it will be more expensive if you buy it alone.
If you go in April, no need to buy ticket now as there is no promotion now. You can wait for January to see if there is reduction. Please keep update to check with website of Qantas, Virgins and Cathay Pacific, maybe you can find some special fare

Do I need to spend the whole day if I go from Sydney to Goldcoast or Goldcoast to Carins by plane? Just buy the early tickets, then you have almost a whole day to enjoy. That's what I always do.
By the way, if I want to buy domestic flight tickets, will I buy it in HK or buy it in Australia? I think the cheapest way is to include your domestic flights in your round trip ticket from HK.
